Creamy Zucchini Pasta

For 2 persons

  • 1 big zucchini (ca. 500 g)
  • 1 onion
  • 1 garlic glove
  • 2 tablespoons olive oil
  • 300 ml soy drink
  • 1 tablespoon almond butter
  • 1 tablespoon nutritional yeast
  • Salt and pepper
  • 250 g pasta
  • Fresh basil
  • 2 tablespoons pine nuts
  • 2 tablespoons parmesan cheese (optional)


  1. Wash the zucchini, cut off the ends and cut into small pieces.
  2. Peel and chop the onion and the garlic.
  3. Fry the onion, garlic and zucchini in a pan with olive oil during 3 minutes.
  4. Add soy drink, almond butter and nutritional yeast, bring to boil and simmer for 10 minutes. Season with salt and pepper.
  5. In the meantime, cook the pasta according to the instructions on the package.
  6. Blend the zucchini mix with a handful of basil until you get a creamy texture.
  7. Drain pasta and mix with the sauce.
  8. Garnish with pine nuts and parmesan cheese.
