Greek Style Orzo Salad

Ingredients
For 3 people
- 200g orzo pasta
- 1 red bell pepper
- 1/2 cucumber
- 1 red onion
- 100g black olives
- 2 handfuls of baby spinach
- 1 package feta
- Salt and pepper
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
Instructions
- Cook the pasta according to instructions and let cool slightly.
- Wash and chop the bell pepper and cucumber.
- Peel and chop the onion.
- Cut olives into small pieces.
- Wash the spinach.
- Mix the pasta with all the vegetables and olives.
- Crumble the feta and add to the salad.
- Season with pepper and add olive oil and balsamic vinegar.
- Mix well and refrigerate for at least an hour.
