Zucchini Fritters

Ingredients
Ingredients for 1 portion:
- 1 large zucchini (approx. 500g)
- 75g flour
- 75g feta cheese
- 50g grated parmesan
- 1 egg
- parsley
- garlic powder
- salt and pepper
- Olive oil for frying
For the dip:
- 100g Greek yogurt
- 1 clove of garlic pressed
- Salt and pepper
- A squeeze of lemon juice
- Fresh herbs (e.g. chives or parsley or basil)
Instructions
- Wash and grate the zucchini.
- Add salt and leave to rest for 10 minutes.
- Using a kitchen towel, squeeze out the juice from the zucchinis.
- Mix the zucchinis well with the flour, crumbled feta, parmesan, egg, pepper, parsley and garlic powder.
- Heat a pan with oil.
- Shape the fritters and fry on both sides.
- For the dip, mix all the ingredients together.
