Creamy Zucchini Pasta

Ingredients
For 2 persons
- 1 big zucchini (ca. 500 g)
- 1 onion
- 1 garlic glove
- 2 tablespoons olive oil
- 300 ml soy drink
- 1 tablespoon almond butter
- 1 tablespoon nutritional yeast
- Salt and pepper
- 250 g pasta
- Fresh basil
- 2 tablespoons pine nuts
- 2 tablespoons parmesan cheese (optional)
Instructions
- Wash the zucchini, cut off the ends and cut into small pieces.
- Peel and chop the onion and the garlic.
- Fry the onion, garlic and zucchini in a pan with olive oil during 3 minutes.
- Add soy drink, almond butter and nutritional yeast, bring to boil and simmer for 10 minutes. Season with salt and pepper.
- In the meantime, cook the pasta according to the instructions on the package.
- Blend the zucchini mix with a handful of basil until you get a creamy texture.
- Drain pasta and mix with the sauce.
- Garnish with pine nuts and parmesan cheese.
