Vegetarian Cabbage Rolls

          Ingredients
Ingredients for 4 portions:
- 6-8 cabbage leaves
 - 1 onion
 - 2 garlic cloves
 - 50 g carrot
 - 1 handful of parsley
 - 250 g vegetarian mince
 - 250 g cooked brown lentils
 - 2 tablespoons mustard
 - 2 tablespoons tomato paste
 - 1 teaspoon paprika powder
 - butter for frying
 - salt and pepper
 
For the sauce:
- 1 tablespoon butter
 - 1 tablespoon of tomato paste
 - 500 ml vegetable stock
 - 1 tablespoon cornflour
 - 100 ml cooking cream
 - 1 teaspoon soy sauce
 - salt and pepper
 
Instructions
- To get the cabbage leaves off easily, place the whole head of cabbage in boiling water for a few minutes.
 - Pull off the cabbage leaves and then put them back into boiling water one by one for a few minutes.
 - Peel and chop the onion and garlic. Peel and grate the carrot. Wash and chop the parsley.
 - In a bowl, mix the onion, garlic, carrots, parsley, mince, lentils, mustard, tomato paste, paprika powder, salt and pepper (preferably with your hands).
 - Place 2 tablespoons of filling in the middle of each cabbage leaf. Then roll up the cabbage leaves. First fold in the sides and then roll up. Wrap with kitchen twine.
 - Heat the butter in a deep pan or roasting tin and fry the cabbage rolls on all sides until golden brown.
 - Add the tomato paste and vegetable stock and simmer with the lid on for approx. 30 minutes.
 - Remove the cabbage rolls from the pan. Mix the cornflour with 2 tablespoons of water and add to the sauce. Add the cooking cream and soy sauce and bring to the boil for a few minutes while stirring.
 - Return the cabbage rolls to the sauce.
 - You can serve the cabbage rolls with potatoes, for example.
