Speculooss Granola

Ingredients
Ingredients for 15 portions :
- 4 tablespoons of coconut oil
- 3 tablespoons maple syrup or honey
- 2 teaspoons speculoos spice (or 1 teaspoon cinnamon + 1 pinch nutmeg + 1/4 teaspoon ginger powder + 1/4 teaspoon cardamom + 1/4 teaspoon clove powder)
- 300g oats
- 100g chopped speculoos cookies
- 100g chopped almonds
- 100g dried cranberries
Instructions
- Line a baking tray with baking paper. Preheat the oven to 160°C.
- Heat the coconut oil with the maple syrup or honey until the oil has melted. Add the spices and mix.
- Place the oats in a bowl with the cookies and almonds. Add the liquid oil mixture and mix well.
- Spread the whole mixture on the baking tray and bake for about 30 minutes.
- When the granola has cooled, you can mix in some dried cranberries.
