Zucchini Fritters

Ingredients

Ingredients for 1 portion:

  • 1 large zucchini (approx. 500g)
  • 75g flour
  • 75g feta cheese
  • 50g grated parmesan
  • 1 egg
  • parsley
  • garlic powder
  • salt and pepper
  • Olive oil for frying

For the dip:

  • 100g Greek yogurt
  • 1 clove of garlic pressed
  • Salt and pepper
  • A squeeze of lemon juice
  • Fresh herbs (e.g. chives or parsley or basil)

Instructions

  • Wash and grate the zucchini.
  • Add salt and leave to rest for 10 minutes.
  • Using a kitchen towel, squeeze out the juice from the zucchinis.
  • Mix the zucchinis well with the flour, crumbled feta, parmesan, egg, pepper, parsley and garlic powder.
  • Heat a pan with oil.
  • Shape the fritters and fry on both sides.
  • For the dip, mix all the ingredients together.
