Speculooss Granola

Ingredients

Ingredients for 15 portions :

  • 4 tablespoons of coconut oil
  • 3 tablespoons maple syrup or honey
  • 2 teaspoons speculoos spice (or 1 teaspoon cinnamon + 1 pinch nutmeg + 1/4 teaspoon ginger powder + 1/4 teaspoon cardamom + 1/4 teaspoon clove powder)
  • 300g oats
  • 100g chopped speculoos cookies
  • 100g chopped almonds
  • 100g dried cranberries

Instructions

  • Line a baking tray with baking paper. Preheat the oven to 160°C.
  • Heat the coconut oil with the maple syrup or honey until the oil has melted. Add the spices and mix.
  • Place the oats in a bowl with the cookies and almonds. Add the liquid oil mixture and mix well.
  • Spread the whole mixture on the baking tray and bake for about 30 minutes.
  • When the granola has cooled, you can mix in some dried cranberries.
